I had Hot Cross buns with honey the other day. We've always got loads for Easter and there's always some needing to be used up.

I just cut and butter 4 hot cross buns, and lay them buttered side up in a buttered tin. Then whisk two eggs with a small carton of single cream, and the same quantity of milk, and pour over the buns. Sprinkle on a bit of demerara and whack it in a medium oven for about 20-25 minutes.

I add ground cloves, cinnamon and lemon zest because I love it, but with good hot cross buns you don't really need to.

I have tried making it with just milk to save on the calories, but it isn't the same. And if you're having the buns and butter in any case, I think it's better to have it as a one off sin rather than compromise it.
