Easy weeknight dinners

I love salads. Can't think of them until spring, though.

Now I just want STODGE.
 
I don’t mind a SALAD, but no it would never fill me up and all the CHOPPING!
 
My one actual good recipe:

Salmon, baked until done in a sauce of one part whiskey, one part brown sugar, with a splash of soy sauce

It sounds weird but is so good and easy
 
I like soups (I had a really nice cauliflower soup today) because they make good quick lunches but yeah I need to have a tomato and mozzarella salad WITH THE SOUP because neither is filling on its own.

I love just popping a FISHCAKE or piece of chicken/fish in the oven, which is done in 20mins and then popping it on top of some spinach with a bit of cheese (feta usually) and salad on the side too.
 
Maybe it’s because you don’t get nice vegetables in Estonia to make the really nice soups. What do you have besides CABBAGE beb? :eyes:
That’s tea actually but I do like some soups it’s just that they are never filling for me. I’ll be hungry in an hour so I don’t see the point in wasting time with them. Also boiled carrot is the worst next to celery for me hence the puking. Neither can be the main ingredient in a dish.
 
I wouldn’t call that very SIMPLE!

My go to is just a chicken breast (fried in butter) bulgur wheat (cooked with a chicken/vegetable stock cube) and kale (fried with a bit of salt/lemon)

Hearty, only requires 3 ingredients minus the seasonings, and takes about 15 mins.

Oh a boiled (toppy) carrot on its side own is the fucking worst. But in a soup it’s like a potato, where other nicer stuff completely take over the flavour.
 
I like cooking, it's just the doing it after being at work all day. I need to be better at making double portions/big pots of things that last a minimum if two nights. And ideally that can be frozen, because as I've posted before, I'm very much subject to my whim in terms I want to eat on any given night. Knowing that I have to finish a pasta bake or whatever that evening some afternoons really would make me feel a little depressed.

Everything is better in butter :shy:

Though that’s only true when OLIVE OIL isn’t really an option. Otherwise olive oil wins EVERYTIME.

I don’t think it's a white thing as much as a British thing, is it? Or at least the French, Spanish, Portuguese, Italians etc at least are a lot better than we are.
 
Who pan fries in butter?!

the only exception to that should be mushrooms because they're such GREEDY OIL SLUTS and a nice dollop of MARG gets em softened up much quicker.
 
I cook pretty much ALL meat in butter, you get so much more FLAVOUR and a lovely CHAR on the outside.
 
butter BURNS though and turns all bitter. I don't like to fry with it at all, unless it's at the end to add a bit of additional flavour to veg.

I prefer olive oil to fry with, although that can't handle really hot temperatures. If i'm doing something like Chinese or indian cooking, then it's time to move on to the vegetable or groundnut oil.

Butter doesn’t burn if you pour a bit of olive oil over it first.
