Easy weeknight dinners

That’s tea actually but I do like some soups it’s just that they are never filling for me. I’ll be hungry in an hour so I don’t see the point in wasting time with them.
You need to add white beans for protein! Two bowls of soup are ridiculously filling while being low calorie if you get the ingredients right.
 
Lots of roasted vegetables. Recent favourite is a pound of carrots or a whole cauliflower with harissa /olive oil / salt / pepper. Into the oven for 40 minutes, put them on a plate with plain yoghurt, unsalted peanuts, coriander with some bread. Delicious.

Its either quick (Pasta, stir fry, etc) or low effort on weeknights/workdays for me. Low effort might take an hour but prep hardly exceeds 10-15 minutes - and then things like stews, soups, curries and anything in the oven take care of themselves. Plus with stews, soups, curries you always end up making too much if you’re cooking for one.

I've been doing healthy-ish stir fry lunches of spaghetti-sliced courgetti, prawns and broccoli in a nice sweet & sour or nasi goreng stir sauce lately. god that's tasty as ALL FUCKERY. comes together in about 6 minutes too.

Oh yes, a whole roasted cauliflower covered in whatever shite I’ve got in the cupboards is delicious!
 
In all seriousness though, in addition to those staples I tend to go for stir fries most of the time or a veg tray bake. Sometimes maybe a baked potato or sweet potato (with cheese... you got the idea.) Those can take time but I tend to go out for a run whilst they're in the oven.

I like cottage cheese with a baked sweet potato.


Sometimes if I'm really not in the mood I just have spaghetti with Marmite (the Nigella edit).

Salads are of course fantastique and they can be filling if you add nuts and cheese to them bien sur. But they're more of a lunch thing for me during the warmer months, whilst soups are my lunch staple during the winter.

God this is boring.
 
I like cooking, it's just the doing it after being at work all day. I need to be better at making double portions/big pots of things that last a minimum if two nights. And ideally that can be frozen, because as I've posted before, I'm very much subject to my whim in terms I want to eat on any given night. Knowing that I have to finish a pasta bake or whatever that evening some afternoons really would make me feel a little depressed.

I don’t enjoy cooking so this is how I do it. Even though i’ve been at home. Obviously you have to be okay with eating the same things a few times but my recommendation is to make two/three recipes in one go and just fill your freezer.

Although my serving suggestions are not especially vegan. I recommend grating some cheese (I use Gruyere) on the bake before you cook it and serving on toast topped with a runny fried egg. It’s really good!

I also buy sesame flavoured packet ramen at my local East Asian supermarket and spruce it up with veg and already deep fried tofu that they also sell there. That is probably the easiest meal I make but probs not that healthy.
 
can't imagine anything WORSE than cooking in batch and having to have the same dinner three times or not having an opportunity to RELAX IN THE KITCHEN!
 
I've made two huge saucepans of broccoli & stilton and carrot & lentil soup to use up the last of the Christmas veg. And because I had some Lakeland soup freezer pouches as a stocking filler.

I dislike cooking more than I dislike having to eat the same meal a few times in close proximity - I don’t find anything relaxing about cooking at all! (probably related to living with three other people all separately vying for the cooker every night). As I mentioned before, I tend to make four portions of 2/3 recipes at a time and I never finish all the portions before my next cook so I am rarely eating the same thing two days in a row.

I started doing it when I realised I was scarcely coming straight home from the office, meaning I ended up buying a lot of expensive crap in the pub or out and about after work.
 
I'm very much a batch cooker too. Currently have 4 different curries in my freezer. I do enjoy cooking, but can't be arsed every night.
 
I tried batch cooking but sharing a fridge/freezer with four other people makes it hard :D :(
