Lots of roasted vegetables. Recent favourite is a pound of carrots or a whole cauliflower with harissa /olive oil / salt / pepper. Into the oven for 40 minutes, put them on a plate with plain yoghurt, unsalted peanuts, coriander with some bread. Delicious.
Its either quick (Pasta, stir fry, etc) or low effort on weeknights/workdays for me. Low effort might take an hour but prep hardly exceeds 10-15 minutes - and then things like stews, soups, curries and anything in the oven take care of themselves. Plus with stews, soups, curries you always end up making too much if you’re cooking for one.
